My go-to lunch/dinner

I dont think you can go wrong with a salad. Well yes you can…I mean how can a McDonalds salad have more calories than the burger?!?! that’s a tad worrying……

But in general the main complaint is that salads aren’t filling enough….well you haven’t tried my idea of a salad…..what I call the ‘man salad’ ha because lets not beat around the bush here….salad leaves are not filling, they are there to make the salad look pretty and give you some additional nutrients….not to fill your stomach. (unless you feel like eating 20 bags of spinach!)

So my salad varies every time and is great as a lunch/dinner or even a side dish and starts with the most important ingredients:

PROTEIN:

bacon or
smoked salmon or
Chicken (usually with bacon) or
Steak slices
Boiled Eggs

VEG: (combination of)

Carrot (I like to peel it length ways instead of cutting it into small pieces)
Spinach
Rocket
Pepper
Beetroot
Chickpeas
Broccoli florets
Avocado
Onion
Tomato
Scallions

FRUIT (yes I think its an awesome addition)

Apple
Mango
Grapes
Dried cranberries
Goji berries
Blueberries

Dressing

Almond butter dressing (recipe to come)
Lemon juice and olive oil
Homemade vinaigrette

Optional Extras

Nuts of choice
Hemps seeds
Flaxseeds
Dried fruit of choice

The salad below was my lunch yesterday and contained a mixture of

Spinach and bistro salad mix, beetroot, carrots, peppers and apple with bacon and grilled cajun chicken and almond butter dressing…..Not filling enough?? Add more PROTEIN!
